How to recognize good quality smoked salmon?

Origin:
Made from a raw material that has never been frozen: Atlantic salmon, the "real thing", the best, a first-quality fish raised in cold waters.

Appearance:
The colour is orangy-red, slightly more coloured on the fillet's surface by the smoking process, yet the fish's original colour aspect is conserved.

 

Odour :
Lightly smoked, it has a delicate aroma.

Taste:
A perfect mix of fresh fish, light salting and a gentle savour of smoke. The fish retains its gustatory qualities.

Texture:
Soft while conserving a certain degree of firmness, it melts in the mouth.
